Vinification

From grape to wine.

Alcoholic fermentation in thermo-regulated concrete vats. Selection of the best parcels. Cold maceration for 24 hours, malolactic fermentation and post-fermentation hot maceration. The blend comes from wines made in barrels.

Tasting notes

Beautiful purplish-red colour. A nose of black fruits — blackberries and morello cherries — with spicy notes of liquorice and white pepper, followed by vanilla, chocolate and mocha. The attack is frank and full. The mouthfeel is rich and concentrated, with a good tannic structure and tannins that are both powerful and coated. The finish is very long and aromatic, with good ageing potential.

The finesse and elegance of this wine, with its powerful nose of dark fruits, pairs delicately with roasted pigeon, crisp fava beans and thin slices of truffle.
